Easy Instant Pot Short Ribs for the Busy Person
As sure as leaves fall from the trees, the Autumn seems to also be the season in which people seem to get busier. On busy workdays, putting together a good meal for the family table can be a task for many. This is when an Instant Pot Short Ribs recipe comes in handy.
What is an Instant Pot?
If you don’t have an Instant Pot and not sure what it is, or the capabilities it has that differentiate it from other slow cookers, the answer, in short, would be that the Easy Pot incorporates the functions of five cooking appliances into one: pressure cooker, slow cooker, rice cooker, steamer and warmer.
Our favorite function is the ability to sear
It’s very user-friendly. Take it from me, I’m not very technical. Also the mention of “pressure cooker” can sometimes intimidate, but rest assured that this is a safe product. Best yet, it also acts as a searing and sauté pan.
Of all the dishes that one can make in this pot, our family favorite is short ribs. What better on a cold evening than a comforting short rib stew? Best yet, it may be the easiest to prepare. It’s a cut of beef that takes on flavor well and is perfect for slow cooking.
Korean Instant Pot Short Ribs
With most recipes applying spicy and sweet flavor profiles, Korean dishes lend itself to the season. The cuisine, for the most part, is nothing short of comforting. A quintessential Korean dish is called Galbi, which is a marinated barbecue short rib, is our favorite Korean food offering.
However, it can be time-consuming to prepare Galbi. There’s lots of marinating time and can make quite the mess in a home kitchen when trying to grill the meat. Hard to keep it from splattering all over the place. Extra cleaning is not ideal for a person already short on time.
When the hankering for Galbi arrives, there is nothing else that can replace. One way to sate the appetite and not have to worry about prep time and cleaning is to make an Instant Pot rendition of the dish.

Hearty Short Rib Recipe for Autumn
3 lbs. Short Ribs
Go Chu Jang (if available)
Canned Pear Halves
Kimchi To Serve with Meal
Turn on Instant Pot to Sear (sauté) option and wait a few minutes.
Meanwhile salt and pepper the ribs.
Sear ribs on all sides.
Keep ribs to the side and sauté, 2 tablespoons of roughly chopped ginger, 3 garlic cloves, 1 whole chopped onion, and scallion.
Once onions are translucent, return ribs to pot.
Change setting to slow cook (8-hours).
Add, half a cup of soy sauce, 4 tablespoons of sesame oil, 3 Tablespoons of Go Chu Jang (replace with red pepper flakes if unavailable), 2 canned pears and its juices, 3 tablespoons of sugar.
Cover, and do what you have to do. It will be ready when you come home for dinner.
For Rice, transfer the ribs to a serving dish and quickly rinse pot. The Instant Pot makes rice in less than 5 minutes.
For Spinach, quickly blanch until dark green in salted water, scoop out spinach and add to ice water to stop cooking and then squeeze out excess water. Once cooled and dry, dress with mirin and sesame oil.
Serve with Mirin seasoned boiled spinach, store bought kimchi and short grain white rice.
Best paired with a cold pilsner beer, or a crisp Sauvignon Blanc.
